String Cheese Chicken Parmesan

Quick easy dinners during the week when sports are in session is a must in our household. So one 0f my favorite dishes to make is Chicken Parmesan. Last night I made it with string cheese because i did not have shredded mozzarella and it came out just as good. I served it up with a Garden Salad and everyone was happy. Here is how you make it:

Start by pounding out your chicken breasts with a mallet.  Feel free to season with salt and pepper. If your chicken breasts are large you can also half them into two breasts. Then crack and egg and whisk it in a bowl. Dip your breasts into the egg and then coat with breadcrumbs.

Lay coated breasts into an 8×11 non stick baking dish and cover with aluminum foil. Bake at 350 degrees for 25 minutes. Then pull them out and cover them with marinara sauce. Sprinkle with mozzarella cheese. I used string cheese since I did not have the shredded kind.

Return to oven for an additional 5 minutes or until cheese is melted. Serve with Capellini or any pasta of your choice. My kids devoured this dish.

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes
Servings 2 -4

Ingredients

  • 8 x11 baking dish
  • 2-4 chicken breasts
  • 1 egg
  • bread crumbs
  • salt/pepper

Instructions

  1. Pound out your chicken. If breasts are really thick half them into two breasts.
  2. Dip breasts into a bowl of whisked raw egg
  3. Coat with bread crumbs on each side
  4. season with salt/pepper
  5. Place breasts into 8x11 non stick baking dish
  6. Cover with aluminum foil
  7. Bake at 350 degrees for 25 minutes
  8. Take out of oven and add marinara sauce on top of breasts.
  9. Sprinkle with mozzarella cheese or sliced string cheese
  10. Bake for another 5 -10 minutes or until cheese is melted.

  1. I would never think of doing it like this, but this is pretty easy, I will have to try this with the kids, they love chicken and anything with string cheese.
