After-school activities, late workdays, and long commutes often make it difficult to have family dinners. But they are so important because when kids experience family dinners on a regular basis, they tend to eat more vegetables and fruits,  fewer fried foods, sodas. I find that frozen foods are often an easy fix for me when I need dinner in a pinch.  Thankfully, Foster Farms has a new line of  frozen, breaded, Never-Fried, Chicken Breast Nuggets, Chicken Breast Tenders and Chicken Breast Fillets. With the same great taste and crispy texture of traditional nugget and tender choices, the new Baked varieties are fully cooked and contain half the fat and 25 percent fewer calories than traditional offerings. Recently I tried the new chicken tenders and made a delicious dinner that was quick, tasty and everyone loved it.  Chicken Parmesan sliders only take about 15 minutes and are super easy to make!

You can find Foster Farms Frozen baked chicken varieties in the frozen aisle of your grocery store. In Southern California I found them at Albertsons and Vons.

  1. First, Bake Chicken according to package. While they are cooking in the oven, assemble the buns in a 9×13 baking dish. Place 16 bun bottoms across  lengthwise. Put bun tops aside.
  2. Once chicken is done baking cut them in half. Place  a half on each bun.
  3. Cover chicken with marinara sauce.
  4. Top with Mozzerella/Parmesan cheese mixture
  5. Brush tops with butter/seasoning mixture

Bake them in a 350 degree oven for 10 minutes covered with aluminum foil. After 10 minutes remove the foil and bake another 10 minutes. You will have a golden crispy bun, melted cheese, and tender chicken covered in marinara sauce ready to be gobbled up by your family.

With 16 sliders you can even put some away for after school snacks the next day. They heat up great in the microwave!

Serve up these chicken Parmesan sliders with a crisp green salad or perhaps some green beans or peas and you will have a complete meal. These would even be great for a potluck or office party.

Baked Chicken Parmesan Slider
Ingredients
  • 16 Hawaiian Bread Buns
  • 8 Frozen Foster Farms Baked Chicken Tenders , cooked (weight is approx.)
  • 1 c Pasta Sauce
  • 1 c Mozzarella Cheese , shredded
  • 1/2 c Parmesan Cheese , shredded
  • 3 Tbsp butter , melted
  • 1 tsp seasoning salt (more to taste)
  • 1 tsp Italian seasoning
Instructions
  1. Cook chicken tenders according to package instructions. Half Each Tender.
  2. Cook Preheat oven to 350°F.
  3. Place the bottom half of the slider buns in a greased casserole dish.
  4. Place chicken tenders on the bottom buns and then cover them in sauce.
  5. Combine the mozzarella and Parmesan cheese and sprinkle it over the sauce.
  6. Place the top buns on the sliders.
  7. Melt the butter and mix the seasoning salt until it is thoroughly combined.
  8. Pour the melted butter over the buns and then sprinkle with Italian seasoning.
  9. Cover the dish with foil and bake for 10 minutes, then remove the foil and continue baking for another 10 minutes.

How cute is this apricot pretzel snacks from Family Fun Magazine! They are so creative. Here is how to make them:

  • For the orange fish, use a knife to slit one end of several dried apricots and insert the bottom of a mini pretzel inside each one.
  • Pinch the apricot around the pretzel to hold it in place.
  • For a fish eye, add a small dot of cream cheese and then press on a mini chocolate chip.
  • Finish off the scene with a jellyfish: Use kitchen shears to slice in half a piece of dried pear and then cut up the bottom part to use as tentacles.

Chicken Parmesan Pizza Recipe

If you love the taste of chicken parmesan you’ll love the unique twist of a chicken parmesan Pizza. It’s made with fresh mozzarella and basil!

ingredients:

  • 1 Italian herb pizza crust
  • 2 boneless, skinless chicken breasts, pounded thin
  • Salt and pepper
  • 2 cups flour
  • 3 eggs, beaten in bowl
  • 2 cups panko bread crumbs
  • 1 cup vegetable oil
  • 1 ½ cups tomato sauce
  • 1 cup thinly sliced mozzarella
  • ¼ cup grated Parmesan
  • 1/8 cup parsley chopped
  • 1/8 cup basil chopped

Directions:

  1. Preheat your oven to 425 degrees.
  2. To start set up your breading station, with one bowl of flour, one bowl of eggs, one bowl of panko bread crumbs
  3. Season with salt and pepper, then dredge the chicken in flour, beaten eggs, then panko. Fry the chicken in vegetable oil until golden brown and cooked through, remove from oil and blot fried chicken on paper towels
  4. To build the pizza, spread the tomato sauce evenly around pizza crust, sprinkle the Parmesan and mozzarella over the pizza, slice the chicken in ½ slices and place on top of the cheese.
  5. Bake for 8-10 minutes or until golden brown
  6. Finish with fresh parsley and basil

Shrimp Scampi Foil Packets

Did you know that shrimp is low in calories and high in protein? One medium shrimp provides about 7 calories and is primarily made of protein. Three ounces of baked, grilled or broiled shrimp provides about 20 grams of protein, just a few grams less than that a 3-ounce chicken breast and contains very little fat and carbohydrate.

I eat a lot of shrimp when I go out to dinner but don’t find myself making it much at home because I always thought it required a lot of preparation and a long time to cook. Boy, was I wrong. After my last restaurant experience, I wanted to try and recreate the entree I had ordered. It had shrimp, corn, sausage and potatoes. You put it all into a piece of foil and grill it! Pretty easy, right?  I went to my local Walmart store and picked up all of the ingredients. Most important was a box of delicious shrimp scampi from SeaPak® in the frozen aisle. Believe it or not, Walmart carries a wide selection of quality seafood products. I like SeaPak because they only use BAP certified aquaculture shrimp and sustainable wild caught shrimp. I also grabbed a box of  SeaPak coconut shrimp in Party Size because my son loves the marmalade sauce it comes with.

Shrimp Scampi Foil Packets

The  greatest thing about this recipe is that you do not need to precook the shrimp. It already comes with the scampi sauce on it. However, you do need to cook your potatoes. You can use fresh or frozen corn cobs, just be sure to cut them into quarters. And be sure to use Andouille sausage and it has just the right amount of spice to compliment this dish.

First, start by slicing the Andouille sausage at an angle. By doing this it exposes more of the meat so the flavors can meld. It also helps the meat get more caramelization.

Then lay out a piece of foil and arrange 6-8 shrimp on it. Add your corn, then your cooked potatoes, and finally the sausage. You can season everything if you like but keep in mind the butter from the scampi has a lot of seasoning already. I sprinkled some parsley on top.

Once you are finished bring all the sides of the foil together and create a packet. You may have to stack some of the ingredients to make room.

Place them on the grill over medium heat and cook for 10-12 minutes. When you open the packets be prepared for a steam cloud as they are very hot inside.

Shrimp Scampi Foil Packets
Ingredients
  • 1 Box of SeaPak frozen Shrimp Scampi
  • 1 (12.8-ounce) package smoked andouille sausage, thinly sliced
  • 2 ears corn , each cut crosswise into 4 pieces
  • 1 pound mixed baby potatoes (red and white)
  • seasoning
  • Parsley
  • Kosher salt and freshly ground black pepper , to taste
Instructions
  1. Preheat a gas or charcoal grill over medium-high heat.
  2. Cook potatoes while you wait for the grill to get hot.
  3. Cut four sheets of foil, about 12-inches long. Divide shrimp, sausage, corn and potatoes into 4 equal portions and add to the center of each foil in a single layer. Season to taste
  4. Fold up all 4 sides of each foil packet and create a packet
  5. Place foil packets on the grill and cook until just cooked through, about 12-15 minutes.
  6. Served immediately, garnished with parsley, if desired.
