Weather Reportcredit: Family Fun Magazine

This is the cutest recipe for all of those curious little weather reporters out there! It simple and the kids can make it themselves if you pre-cut everything. Plus, Challah tastes amazing if you have never had it before.

Weather Report Sandwich

  • Cut a slice of braided challah bread from the middle of the loaf.
  • Using a cookie cutter, shape a slice of orange cheddar cheese into a circle. Place it partly under the bread. Cut the remaining cheese into small triangles, and place them around the circle as the sun’s rays.
  • Add blueberries as eyes and as rain falling from the cloud.
  • Slice off the side of a red apple, then use a straw to punch out two circles of its skin for the cheeks.
  • Add a small piece of fruit leather for the smile.

Shrimp Scampi Foil Packets

Did you know that shrimp is low in calories and high in protein? One medium shrimp provides about 7 calories and is primarily made of protein. Three ounces of baked, grilled or broiled shrimp provides about 20 grams of protein, just a few grams less than that a 3-ounce chicken breast and contains very little fat and carbohydrate.

I eat a lot of shrimp when I go out to dinner but don’t find myself making it much at home because I always thought it required a lot of preparation and a long time to cook. Boy, was I wrong. After my last restaurant experience, I wanted to try and recreate the entree I had ordered. It had shrimp, corn, sausage and potatoes. You put it all into a piece of foil and grill it! Pretty easy, right?  I went to my local Walmart store and picked up all of the ingredients. Most important was a box of delicious shrimp scampi from SeaPak® in the frozen aisle. Believe it or not, Walmart carries a wide selection of quality seafood products. I like SeaPak because they only use BAP certified aquaculture shrimp and sustainable wild caught shrimp. I also grabbed a box of  SeaPak coconut shrimp in Party Size because my son loves the marmalade sauce it comes with.

Shrimp Scampi Foil Packets

The  greatest thing about this recipe is that you do not need to precook the shrimp. It already comes with the scampi sauce on it. However, you do need to cook your potatoes. You can use fresh or frozen corn cobs, just be sure to cut them into quarters. And be sure to use Andouille sausage and it has just the right amount of spice to compliment this dish.

First, start by slicing the Andouille sausage at an angle. By doing this it exposes more of the meat so the flavors can meld. It also helps the meat get more caramelization.

Then lay out a piece of foil and arrange 6-8 shrimp on it. Add your corn, then your cooked potatoes, and finally the sausage. You can season everything if you like but keep in mind the butter from the scampi has a lot of seasoning already. I sprinkled some parsley on top.

Once you are finished bring all the sides of the foil together and create a packet. You may have to stack some of the ingredients to make room.

Place them on the grill over medium heat and cook for 10-12 minutes. When you open the packets be prepared for a steam cloud as they are very hot inside.

Looks good doesn’t it? the potatoes are so tender and the sausage is so juicy!

You can also take the foil out and put it in a bowl for a cleaner look.

Tony Roma’s Gluten Free Products and Recipes

Baby Back Pork Ribs

With Summer in full swing here in CA,  it is not often that we are home during the day which makes it  difficult to prepare dinner before we get home. Recently,  I discovered Tony Roma’s pre-cooked ribs and pulled pork at my local grocery store and just like that,  dinner time just got easier at our house!

The ribs come in an easy top open package already coated in a tangy BBQ sauce. There are several ways to cook them!

1. Just place them in a pan, meat side down, spread the sauce, and put the pan in the oven broil for ten minutes. Remove them from the oven and turn them, apply more sauce and heat for an additional six minutes. In less than 20 minutes, you’ll have delicious pork ribs with the signature Tony Roma taste.

2.You can even grill the pre-cooked ribs, meat side up on medium for seven minutes, turning, brushing on more sauce and heating for about four minutes.

3. Even better, try pork ribs oven baked by placing them in a pan, covering them with sauce and heat for 20 to 25 minutes at 400 degrees Fahrenheit.

  Pulled Pork

Tony Roma’s also carries their signature style pulled pork in the grocery store. This precooked barbecue is easy to prepare and can be on your table in about 20 minutes. Since two of my family members eat Gluten-Free we did not use any buns,  instead we paired it with some fruit and vegetable and it was a very filling dinner.

Tony Roma’s also has some delicious Recipes as well. Here are 3 to use this summer.
