Quick easy dinners during the week when sports are in session is a must in our household. So one 0f my favorite dishes to make is Chicken Parmesan. Last night I made it with string cheese because i did not have shredded mozzarella and it came out just as good. I served it up with a Garden Salad and everyone was happy. Here is how you make it:
Start by pounding out your chicken breasts with a mallet. Feel free to season with salt and pepper. If your chicken breasts are large you can also half them into two breasts. Then crack and egg and whisk it in a bowl. Dip your breasts into the egg and then coat with breadcrumbs.
Lay coated breasts into an 8×11 non stick baking dish and cover with aluminum foil. Bake at 350 degrees for 25 minutes. Then pull them out and cover them with marinara sauce. Sprinkle with mozzarella cheese. I used string cheese since I did not have the shredded kind.
Return to oven for an additional 5 minutes or until cheese is melted. Serve with Capellini or any pasta of your choice. My kids devoured this dish.

Wow, I would never have thought to use string cheese! What a great idea!
I would never think of doing it like this, but this is pretty easy, I will have to try this with the kids, they love chicken and anything with string cheese.
This looks really good. I’m going to have to give this a try!

Looks yummy! I haven’t had chicken Parmesan in a while. I need to add it to our menu.
My family constantly request to get chicken parmesan for dinner but I do not know how to make it. Thanks for a recipe
Can you do this with eggplant parmesan as well? I have everything but the mozzarella I don’t know how I missed putting that on my list ?
Totally! I think it’s probably similar texture. That is why I used string cheese…I didn’t have any sliced mozzarella!
What an easy dinner that my entire family will enjoy!
