Brown Butter Mini Gnocchi with bacon, spinach and chicken

Have you seen the new tri-color mini gnocchi from Trader Joe’s? Sheena Chang from FoodiewithFlair came up with a delicious recipe using these adorable little potato pouches. If you like your gnocchi a little softer you can cook them for a longer period of time. This dish is not only colorful but it has a nice amount of protein, fiber, Vitamin A, Vitamin C, Vitamin K, iron, folate, and potassium. You coulds also add some sun-dried tomatoes or roasted cherry tomatoes to this dish for a fuller flavor!

First, Precook bacon and chop into pieces. Then, cook your chicken. You can also used shredded rotisserie chicken to save some time. Then, Boil gnocchi for 2-3 minutes until cooked through and floating to the top. Drain. gnocchi_bacon

Next, In a pan, heat up brown butter. Add cooked gnocchi over high heat until lightly browned and crispy. Add in bacon and cooked chicken and toss. Let that come together for about two more minutes. Lastly, toss in a handful of spinach and cook just until wilted.

Lastly, Remove pasta from heat and finish with a sprinkle of parmesan cheese.

Ingredients

  • 1 pkg Tri-color mini gnocchi from Trader Joe’s
  • 3 tbsp Butter
  • 2-3 strips Bacon
  • 1-2 Chicken Breasts
  • 1 bunch spinach

Instructions

  1. Precook bacon and chop into pieces.

  2. Cook Chicken or Use Shredded Rotisserie

  3. Boil gnocchi for 2-3 minutes until cooked through and floating to the top. Drain.

  4. In a pan, heat up brown butter. Add cooked gnocchi over high heat until lightly browned and crispy. Add in bacon and cooked chicken and toss. Let that come together for about two more minutes.

  5. Lastly, toss in a handful of spinach and cook just until wilted.

  6. Remove pasta from heat and finish with a sprinkle of parmesan cheese.
