Romaine Salad with Pears, Pomegranate and Pistachios
This Thanksgiving was a tough one for me. It was the first Thanksgiving I ever had without my dad. It’s been 4 weeks since he passed and it still feels like he just kissed me goodnight yesterday.To honor him I made a salad with one of his favorite things. Pistachios. Here is a recipe for a Pomegranate, Pistachio and Pear Salad.
First start by chopping up your romaine lettuce. Wash it and then spin it in a salad spinner.
Then chop up all fruits and vegetables.
Add each item one at a time in your desired fashion until it looks the way you want it to look.
Finally toss it all together and use Marzetti simply dressed pomegranate dressing.
Romaine Salad with Pears, Pomegranite and Pistachios
Ingredients
- 1 Apple , sweet
- 1 Cucumber , small
- 1 Pear
- 1 Pomegranate
- 2 tbsp Pomegranate , juice
- 1/3 cup Pomegranate arils
- 1 Red bell pepper , small
- 1/4 Red onion
- 1 large head Romaine lettuce
- Salt and pepper
- 1/3 cup Pepitas , roasted and salted
- 1/3 cup Pistachios , roasted and salted
- 1/2 cup Feta cheese
Instructions

Combine salad ingredients in a large bowl. If serving entire salad immediately, drizzle with desired amount of dressing and toss to coat. If there might be leftovers, drizzle dressing on individual salad servings. Top with freshly ground salt and pepper.
I love all of the main ingredients. I also need to eat more salads. Therefore, this is something that I am definitely going to have to try.
