Farm Fresh To You
I love getting stuff delivered to me. If it will make my life easier I want it to come straight to my door. Which is EXACTLY what Farm Fresh To You does. I could see it now….no more going to the grocery store every couple of days to get my fresh produce and no more looking through the mounds of fruits and veggies with no idea where they came from. FARM FRESH TO YOU – THE BOX
I know it’s close to the holidays so I can say that when my box arrived I was as giddy as a kid on Christmas morning. It came straight to my door in the time frame that they told me it would be delivered. My kids were home and they started to wonder what fabulous fruits were inside. They really didn’t say much about the veggies but my husband sure did. He loves my cooking and was excited to get to try some new veggie dishes.
And let me tell you something about the wonderful smell!! When I opened the box the smell that came out was so fragrant and fresh. It was like we were in the middle of the farm smelling all these wonderful organic things. Inside the box you also get a newsletter directly from your farmer. It includes info about the farm, some recipes and usually a coupon if you share this wonderful service with a friend.
Here is what came in this weeks box:
- 3 Ruby Grapefruits
- 4 Fuji Apples
- 4 D’Anjou Pears
- 2 Butternut Squash
- 1 lb Russian Banana Potatoes
- 2 lbs Satsuma Mandarins
- 2 Naval Oranges
- 1 bunch Nantes Carrots
- 1 bunch Celery
- 1 King Richard Leek
- 1 bunch Broccoli
- 1 head Lettuce
- 1 bunch Spinach
- 4 Kiwis
- 2 Mango Oranges
- 2 bunches mixed herbs
- 1 Meyer lemon
The next day for lunch I was so excited to dive right into all the yummy fruits and veggies I got. I decided to have a gigantic Satsuma Mandarin and a few stalks of celery. Now normally I put peanut butter or ranch on my celery but these were so sweet I didn’t need anything! And the Satsuma Mandarin was juicy and delicious. I perfect pairing with my home-made French Onion Soup.
FARM FRESH TO YOU – THE RECIPE
There were 2 recipes included in the newsletter. They were both broccoli recipes. Now I have to be honest and tell you that my family aren’t big broccoli fans unless its slathered with cheese sauce. When I told me husband I was making broccoli with no cheese sauce he politely said he would try it but to not get my hopes up. I decided to make Magic Broccoli. It sounded magical so I thought what the heck….why not? The ingredients are:
- 1 medium head of broccoli
- 1 garlic cloves finely sliced (I used the pre-cut garlic that you can buy in bulk…we like garlic so I used a tad more than 1 clove)
- 2 tablespoons extra virgin olive oil separated (you are going to use 1 tablespoon before cooking and 1 tablespoon after cooking)
- 1/4 teaspoon salt (adjust to your taste)
- Black Pepper
- Zest of a quarter of a lemon
- 3/4 tablespoon lemon juice
- 1 tablespoon freshly grated parmesan (I used the non freshly grated but it’s what I had in my cupboard)
So the first step is to pre-heat your oven to 350 degree F. Then you cut the broccoli into florets and pile onto a baking tray.
Drizzle with 1 tablespoon extra virgin olive oil, scatter with garlic, salt and pepper. Use your fingers to toss, then spread out over tray in a single layer. Adjust the salt to your taste. Bake for 20 to 25 minutes until the tips of the florets are slightly browned. The broccoli should be “tender crisp” meaning just cooked through, not overcooked and floppy.
Remove from the oven and immediately drizzle over lemon juice and remaining 1 tablespoon olive oil. Toss to combine. Scatter over lemon zest and Parmesan cheese then serve immediately.
I served it with ribs and mashed potatoes. My husband took one bite and was floored at how good it was. He actually admitted it didn’t need cheese sauce! I was impressed with myself as well because I liked it so much. This is definitely a fan favorite and will be served again. As long as my Farm Fresh To You boxes keep coming with broccoli I will keep making Magic Broccoli!
