Last night I needed to make a side dish and I saw this bag of Arborio rice in my cupboard, so I found a few ingredients and decided to make a Pea, Lemon and Parmesan Risotto.
Pea, Lemon and Parmesan Risotto
- 1 cup arborio rice
- 1/2 cup peas
- 1/4 cup lemon juice
- 1/2 cup parmesan cheese
- 3 cups chicken or vegetable stock
- 2 tablespoons butter
- Lemon Pepper Seasoning
Heat a large saucepan on high. Add butter and rice. Cook until rice is brown about 5 mins.
Add 1 cup of chicken or vegetable stock and reduce heat to low. When the liquid is absorbed into the rice add the other 2 cups. Then when stock has been absorbed add the lemon juice and peas and the lemon pepper seasoning.
Finish of by adding shaved Parmesan Cheese at the end.

- Bacon bits
