Mint Chocolate Chip Smoothie

Make this smoothie for yourself to enjoy, or involve the kids and make it a fun family activity. All the ingredients are chosen to create a smoothie that won’t leave you with the sugar highs and lows. The avocado and chia seeds offer healthy fats, and collagen peptides offer protein to help balance blood sugar and keep you satiated, and of course there’s plenty of fiber. Enjoy!

Serving Size: 2


2 cups packed fresh spinach

1/4 cup packed fresh mint

1.5-2 frozen bananas

1 scoop of ice

1/2 avocado

1/2 cup frozen riced cauliflower

1 Tbsp chia seeds

2 servings Collagen Peptides (unflavored, or chocolate)

1.5 cups unsweetened plant milk

2 Tbsp cacao nibs

Optional: a fresh pitted date for sweetness, and cacao powder to make more chocolate-y


Put all ingredients except cacao nibs in a high speed blender, and blend until smooth. Then add the cacao nibs, blending for another 5-10 seconds to break them up slightly but not completely pulverize. Pour in a glass and enjoy!

Tip for easier blending: Wait to add any small seeds or powdered items until the other main ingredients are blended at least half way. Adding these to a majority liquid base will keep them from getting stuck all over the sides of your blender when you start blending.
