There are two things in life that I cannot live without. One of them is oxygen, and the other is my Crock Pot. I seriously own about 4 of them. Big ones, little ones, and mini ones. Almost all of my dinner are made in the crock pot because it is so easy and I love how tender the meat comes out. My latest crock pot meal was inspired from a recipe I saw on www.allrecipes.com. I tweaked a few of the ingredients and the meal turned out really good. Way better than I expected. Here are the ingredients you will need:
Cilantro Lime Chicken
- 2 large chicken breasts
- minced garlic
- bunch of cilantro
- 3-4 tbs Lime Juice
- Caraway Seed
- 1/2 chopped red onion
- 1 can black beans drained
- 1-2 cups of frozen corn
Place chicken breasts in crockpot. Chop your garlic, red onion, and cilantro and place on top of chicken. Add corn, black beans, caraway seeds, and lime juice.
Cover and cook on low for 6-8 hours. pull chicken apart when finished.
Serve with french bread and salad.

- 1/2 chopped red onion
- 1 tbsp caraway seeds
- 1 can black beans drained
- 1-2 cups frozen corn
- 1 bunch cilantro
- 3-4 tbsp lime juice

Place all ingredients in a crockpot and cook on low for 6-8 hours or high for 4-6 hours.
