Pea, Lemon and Parmesan Risotto

  • 1 cup arborio rice
  • 1/2 cup peas
  • 1/4 cup lemon juice
  • 1/2 cup parmesan cheese
  • 3 cups vegetable stock
  • 2 tablespoons butter
  • lemon pepper seasoning
  • Bacon bits


  1. Heat a large sauce pan on high. Add butter and rice. Cook till the rice is brown. About 5 mins.
  2. Add 1 cup of chicken or vegetable stock and reduce heat to low. When the liquid is absorbed into the rice add the other 2 cups.
  3. When stock has been absorbed add the lemon juice and peas and lemon pepper seasoning.
  4. Top with Parmesan Cheese and bacon bits at the end.
